Having a Thanksgiving pot luck at the office today.
I made two chilis.
A medium heat Bourbon chili made with stew beef, black beans, jalapenos, and a Kentucky bourbon reduction (simmered 750ml of Bourbon down to about 350ml)
Keeping the heat medium allows the bourbon flavor to come through.
Second is Ghost of Tastebuds Past.
A 5%er chili. Jalapeno, scorcher Ghost and Carolina Reaper peppers.
Future variation: a chili with no meat. Use diced boneless leg of lamb.
