Figs

For those that love figs…are you familiar with the wasp? 😳

That’s the reason my wife won’t eat them. They’re on a list of ~5 things she refuses to eat. I’m waaaay more picky than that.

Learn something new every day, had never heard of a fig wasp.
 
Finally started getting some today, last 2 bushes left on my grandmothers homestead. Couldn‘t stand them when she tried to get me to eat them when I was little, now I love them.
 
Boil figs down until soft, "unroll" a pork tenderloin with a knife to about 1/2" thick. Olive oil, pepper, and a little rosemary on the pork before spreading the softly mashed figs all over. Roll this thing up and bake in oven on 275 until inside hits safe temp. You can pan sear outside of roll before baking for even better results. Slice and baste with a spoonful of drippings from roasting dish.
 
My mama made fig preserves...wasn't that big of a fan when young, but on my. Put those on a biscuit...look out.

We have a fig tree at my dad's estate that descended from the ones HIS dad had. That's some good eatin', right off the limbs.
 
Try Pan De Higo.....awesomeness and looks cool when plated. I would jam any extra. You can slice Brie on to a cracker and top with fig jam.
