Figs

I see recipes calling for roasting the figs. In Italy, they were simply raw, cut in half and wrapped.

 
Stuff with cream cheese, grill and finish with good honey. A favorite dessert here.

Chop and add to salads.

Lamb tagine...

Stuff that fig with a cube grana padano, wrap and grill it. Crispy proscuitto and gooey cheese? Perfect!
 
If you go the prosciutto route, don’t cheap out. Try to find authentic Prosciutto di Parma.

A quality Spanish Iberico ham works too. Harder to find than the Proscuitto di Parma.

I usually have so many figs I'm tossing them, but despite being full as a tick, none of my fig trees are turning this year; they're as green as can be.
 
My wife does the prosciutto wrap on an oiled pan with salt and pepper, then 5 mins under the broiler... Absolutely delicious. Love those other ideas too. I never liked figs until I tasted a fresh one here in NC, and they became one of my favorites.
 
A neighbor from my childhood had a bunch of fig trees and made wine from it … real sweet and kick you butt strong.
 
Over the past 5 or 6 years, I've planted a fig tree in my yard. None lived. This latest one looks promising.

Maybe I'll finally be able to participate in a fig thread.

That’s the reason my wife won’t eat them. They’re on a list of ~5 things she refuses to eat. I’m waaaay more picky than that.
 
If you make them into jam...spread on a plain pita chip, top with some goat cheese, season with a sprinkle of thyme, and drizzle with balsamic vinegar. Everybody who tries this at my place finds themselves unconsiously eating the whole tray full on the appetizer cart. Sometimes territorial fights between spouses start.
 
My Grandmother used to make fig cakes. I wish I had the recipe.

I know you said no preserves BUT- When I was a kid my Mom made fig preserves. But, we had so many she also used strawberry Koolaid to flavor the preserves and it taste and looked just like strawberry preserves. made great strawberry pies.
 
Figs are just good eating by themselves. We’ve got a fig bush, but I haven’t looked at it recently.
I love eating them straight off the bush. Next after that, preserves on cream cheese on a pita chip. Then there's peanut butter and fig preserves sandwich...

But be sure to let them get ripe.

Sort of tangential to your question, but I simply love going outside with a hot cup of coffee and going over to pluck some figs, sit down on the porch and eat those figs and sip that coffee before getting ready for work. There isn't much better to center ones soul.
 
My tree has been pretty loaded the last few years. Right now I am making a bunch into a adult beverage type thing thing.
My tree is a direct descendant of the trees my Grandfather and Uncles had in Brooklyn that came from cuttings from the trees in Carloforte, that they brought over a hundred years or so ago. Whenever we moved anywhere my Dad took cuttings and made another generation of trees, the one I have now is from one of my Dads cuttings. I just thought it was interesting to know the history of a tree.
I'm going over there to visit relatives next month, I wonder if I could find one of the "original", first generation, trees.
When the BlackFish would be running, we would all go down the the Jetties in Jersey and catch a bunch. The heads and guts all went under the fig trees for fertilizer.
