Polish food (What's your favorite ethnic food?)

I can tell you where I'll be on Saturday.
Charlotte may suck overall, but on occasion something good happens like REAL GERMAN FOOD AND BEER. New restaurant and brewery opening.
Just got home. This place was Jammed. There was a line to get in at 3:30 p.m. The people I was meeting got there a little early so they managed to get in before I got there, and that allowed me to skip the line. Good schnitzle, good bratwurst, good bock, decent hefeweizen.
 
I did not have a single meal, nor beer, in Hungary that was not excellent. They definitely have their own little thing going on. My guess is the mix of Roman, Slav & Magyar influences over the millennia.

I enjoyed Romanian vittles immensely as well, but then you gotta be careful to avoid the chitlin/tripe or brain dishes. What really shocked me was Romania's beer culture. I'd forgotten they'd had a sizeable population of ethnic Germans for a couple centuries. Their beer game is definitely on point.
We go to Romania every other year, I love Miici. My Sister in Laws family grew up as farmers in the country. Her mom can cook, she makes the Brains, sliced thin and fried, awesome, the Carp eggs. Have you been to the alley behind Bran Castle where they have all the sausage, the Kurtos-Kalacas(chimney cake), and of course, Miici?
As far as my cooking, I was raised Italian in Brooklyn, the whole neighborhood was related, Sunday dinner was an all day affair at Aunt Roses. We go back to Sardinia every other year too, and my fiancee is a born and raised in Italy girl. I make a mean sauce, also Linguini alla Vongale e Bottarga( Pasta with clams and salt cured Tuna eggs), Squid Stew. I have alot of my Dads old recipes, alot of which you will only see in Carloforte
 
I'm a very proud American, but I am also very proud of my Polish ethnicity and many of our Polish and family traditions.

My wife and I love making Polish food from scratch. Our neighbors have family visiting and they asked us to make some food while they are here.

So this was last night's project. Homemade Gołąbki (pronounced "gaw WOAMB kee") aka Stuffed cabbage. We call them "piggies". Some folks also call them Halupki (Slovak). A bit a trivia, Gołąbki roughly translates to "little pigeons".

Also, what do you do with the leftover cabbage? Make Haluski! Cabbage and noodles (or homemade dumplings).

We also make homemade pierogi (primarily potato and cheese). And this summer I have plans to make and smoke my own kielbasa.

So what are your favorite ethinic foods you like to make?

Cabbage rolls, as I have always heard them called, may be my favorite food ever.
 
Cantonese. Char Sui, Ha Gow, Fun Gor, Shu Mai, Dried scallop and salted duck egg rice, roast duck.

Unfortunately, hard to find legit Chinese food in WNC.
