Thinking about a griddle

I currently have a weber gas grill. It’s pretty good, but even with all burners on high it doesn’t sear well. I can sear in a cast iron pan on the side burner. If I need a larger surface I can use a rectangular cast iron griddle or even the pizza iron (although with no lip it’s a fire hazard with bacon).

was thinking toss the grill and get a blackstone. My concern is fish and vegetables, I think they need the hot air circulation.

anyone with a griddle dumped their gas grill?
 
I use wood, charcoal or pellets for everything. Haven't got a Blackstone yet, but I am thinking about getting one

I have a weber gas and a Primo XL charcoal grill and really wanted to add a griddle and also a pellet smoker. I ended up adding a griddle insert in the Weber. I haven't really used the Weber in the last few years as I just prefer cooking with charcoal. That has definitely changed with adding the griddle insert. I still typically cook steaks on the Primo because I can get it hotter for searing. Smash burgers on the griddle are awesome! Also being able to cook a whole breakfast easily with gas is pretty nice. Crappy picture I just took as I'm going out to cook some smash burgers with toasted buns. I'll stick the link to the griddle I bought off Amazon below.

Looks like it is about $40 cheaper right now than when I bought it last summer.

I’ve got a really nice gas grill & an Oklahoma Joe’s charcoal/wood smoker & we’re thinking about getting a Blackstone. We were already thinking about one & after a week camping at the lake with assorted family & friends, cooking almost ever meal with one, it went from want to need.

Slowly getting my outdoor cooking skills back together. Bought a “Cajun cooker” setup this spring & have learned shrimp boils & frying turkeys. Yum.
 
Keep the grill and get the griddle too. I have two different gas grills (a Cook On with a rotisserie and a Weber), A Weber Gold charcoal w/ pepper start assist, a Blackstome and smoker. I use all of them for different items / styles of cooking. In regard to the blackstone, you can cook everything on there if you want. Just make sure to have a long spatula to flip grilled fish… and man it’s nice to cook a pound of bacon all at once! If you are worried about hot air circulation on the griddle, you can cover the item with a large stainless steel bowl.
 
I’ve got a 36” 4 burner blackstone and really like it. I personally think it’s best for large quantity simple cooking. Does great with stir fry, breakfast foods, cheese steaks etc. For best tasting, flavorful food I’m sticking with my pellet grill/smoker. For example, smash burgers on the blackstone are super quick, easy, and tasty. If I want to enjoy more flavorful burgers, smoke then sear just tastes better. Both good, just different. Like making chicken fried rice. Quick easy and tasty on the griddle, but if you want a whole piece of chicken it just tastes better smoked then seared. Both good, but different. I use both quite often.
 
I just picked up a 4 burner Blackstone griddle from Tractor Supply during their early Black Friday sale. Theirs is usually $349 but they knocked another 100 bucks off. I pulled the trigger at $249 and have cooked steak on it once that turned out pretty close to my cast iron stove top steaks.

Ready to try some stir fry and other dishes.

It’s a restaurant supply house in a third world section of sugar creek Rd. Tons of cooking stuff at good prices and open to the public. But do mind the craters in the parking lot.

Black stone steaks are great, as they produce some great crustification! The only problem on the flat top is basting the steak.. in a cast iron pan, you can turn it. up and baste the steak by spooning the garlic / time butter back onto the steak. Not impossible on the flat, but harder.

Did me some of that tonight with a crappy t-bone. My daughter commented that is was perfect. And I am not a great steak cook.
