What's for dinner?

Did some burgers in cast iron tonight. My cardiologist says no, but my belly said yes. :D

"Mystery meat" burgers. Friend of mine is a processor. He brought them to work today. The grinder doesn't ever pull all the meat through. He takes whatever is left and mixes it all into patties. All the different deer sausage all turned into patties. Ramps, peppers, cheese, etc. never know what's in the next bite.

It's amazing!
 
First attempt at broccoli and cheese soup. Texture could be improved but the taste was spot on.

Tonight, Chicken rollers stuffed with Spinach , Feta cheese, and tomato. Homemade Macaroni & Cheese, and Broccoli & Pepper salad.

Texas Roadhouse tonight for my daughter's B'day dinner. That was a mistake she'll not make again. The rolls with cinnamon butter were the only decent thing.
 
Pressure Cooker Leftover Chicken & Veggie Soup!

Simple ingredients:
Leftover Bojangles roast chicken bites
Chicken broth
Leftover frozen veggies
Cream of mushroom soup
Cream of chicken soup
Frank’s Red Hot
Garlic powder
Onion powder
A bit of cream

Texas Roadhouse tonight for my daughter's B'day dinner. That was a mistake she'll not make again. The rolls with cinnamon butter were the only decent thing.
That's odd. My local TR is excellent in both the food and service. Must be a management issue.

Leftover gumbo i made last night with real file powder (dried and powdered sassafras leaves). Makes all the difference in the world. Was pleasantly surprised to find it at HT.
 
Last night, a "Meditteranean" salad - romaine, kalamata olives, feta cheese, cucumber, threw in some snap peas 'cause I had 'em, some heirloom tomato bits... dressing was olive oil, lemon juice, red wine vinegar, S&P, garlic. Caveat: had a double cheeseburger and fries for lunch!

Well, I decided on KFC. That's Kettle Fried Chicken. Dipped some legs in an egg wash and dropped into a bag of seasoned flour and put on the grill.

I checked the temp with an internal thermometer and they were done. I may have got too much flour in places as they didn't get brown all over. I was afraid to leave them on much longer because I was afraid they'd overcook and dry out. They were awesome, crispy outside and juicy inside. Tasted just like fried chicken without the grease. Next time I'll leave them on a little longer and let them brown and crisp up more.

Larry, those look great! I'm going to try that soon. I'll have to do a half and half.... half dry rub and the other floured.

Tim, they turned out great, just like fried. Some of them have toothpicks in them because they are spiced up with Kickin Chikin. I keep them separate because the wife doesn't like spicy.
