Day 1 of my New Years resolution was a “smashing” success... I vowed to eat smashburgers at least once per month in 2018. January is complete!! [emoji12]

The New Years tradition at my house...put on a big pot of chili beans not long after the ball drops. Sleep, and after I get up add the onions and browned ground beef.

So it's chili beans and beef at my house today... and tomorrow lol

I decided to celebrate a little for New Years Eve. Plus Harris Teeter was running some insanely LOW prices on filet mingon and lobster tail. Jumbo shrimp from Saltwater Seafood off Capital Blvd. As always everything sous vide then finished over hardwood charcoal.

One of these days, I'll try this sous vide thing! That surf & turf looks great!

We did something vaguely similar New Year's Eve: we had a peppercorn pate' for snacks, then Lis made a seafood stew with fennel & vegies, swordfish, shrimp, and bay scallops for dinner. It was ok, but she's kinda new to seafood cookin', and it was waaaay too lemony (I rarely do citrus with seafood stews, but it was her gig).

Had the leftovers tonight- it was awesome!!! Turns out she'd 'garnished' the debut with lemon zest, which killed it (don't tell her I said that). I guess the flavors blended a little overnight, and there was no zest, so it was really good.

Cooked a ham. Made some rice with the resulting liquid, what we call "ham rice." Busted open a can of tomatoes and okra for some colour.

Wifey was happy to come home from her shift at the hospital and dinner was waiting on her.

One of our vendors sent me a YUGE tin of Danish butter cookies for Christmas. They was dessert. Yum!

Tonight we had Liver-N-Onions, Rice-N-Gravy, Rutabagas, Carrots, and Corn Bread. Red Velvet cake and coffee for dessert.

I haven't had liver and onions in sooo long !!
I need to fix that ... Soon.

Only used Cucumber tonight. Avacodo was not ripe enough... it was still a little too hard. Must have been pretty good.... I could not make it fast enough! lol

How did you do your sushi rice? I have one of these and it is awesome for making the base rice. It is the best rice cooker I have ever had. I then use sake vinegar, rice vinegar, sugar & salt. Good rice makes or breaks sushi at home and at the restaurant.

Just a regular pot for cooking the rice. It turned out really well.... we used Sushi rice. We used some rice vinegar, butter, and chicken stock. We didn’t have all the ingredients we wanted so used what we had. lol

Just may have to invest in a rice cooker like that. :)

550 Degree oven on a pizza stone at the highest rack setting. The key is the dough because you cannot get to 800+ of a commercial pizza oven you need to add some fat or oil to the dough along with a little sugar and you can get the proper crust at lower home oven temps. Also it helps to make the dough 48-72 hours before you cook it.

Pollo Annerito con Insalata -- or so says oogle translate...

Blackened chicken cut up on top of salad with seared apple slices and a homemade cranberry vinigarette... Totally winged it, came out great!
