Dry brined the meat yesterday and started smoking it at 4 AM this morning. I did not use a Texas crutch it this time. I am trying to leave it naked and get a deeper smoke on it. I did pump some beef broth into it this morning right before I put the rub on it. I am serving it with collards, cole slaw & baked beans. Pre dinner football appetizers are deviled eggs, nachos with chili and homemade guacamole.
Beef, pork, and taters...……….all on one plate. Country eatin' at its finest.

The kids don't care for the sourdough so when I want the flavor, I make a loaf using my homemade fermented kefir milk as the liquid. Tastes JUST like sourdough.Just wait til you grow your own sourdough culture
